3 Assorted peppers
1 Bag of spinach
1 Can of black olives
Baby Bella mushrooms
1 bag of Mozzarella, Italian 5 cheese and mozzarella & cheddar
1 Can of tomato basil sauce
2 Heads of Cauliflower
Seasoning : Salt, Pepper, Italian seasoning, Parsley and Garlic powder.
Step 1: Break apart Cauliflower and steam for 10 minutes, or until it is completely soft
Step 2: Drain the cauliflower and put it in a food processor to break down into crumb size
Step 3: Move cauliflower out of processor and into bowl to add ingredients for crust.
Step 4: Add 2 cracked eggs, seasoning (season to your personal taste), 1/2 cup of mozzarella, 1/4 cup of Mozzarella and cheddar, 1/4 cup of Italian 5 cheese blend.
Step 5: Mix until the eggs have completely saturated into cauliflower mix and seasoning and cheese are distributed evenly.
Step 6: Cover baking sheet with parchment paper and spray with any non-stick spray
Step 7: Spread mixture onto baking sheet and work it around until it is flattened out evenly on pan.
Step 8: Preheat oven to 425 degrees and bake crust for 30 minutes or until it is browned and crispy. Mine was light brown, however in the future I will leave it in longer and possibly broil it because I like a very crispy crust.
Step 9: While your crust is baking chop and saute your veggies in a pan with olive oil and add light seasoning. I used about 1 quarter of each pepper, 1 quarter onion, and 4 Baby bella mushrooms.
Step 10: Take the crust out when it is browned to your liking and add toppings. I layered the tomato sauce first,then three cheeses, sauteed vegetables, 2 hand fulls of spinach, and 1 whole can of black olives. Pop it back in the oven till the cheese is melted and browned
